Examination of human diet and nutrition from an evolutionary and ecological perspective and the sociocultural and biological dimensions of food practices. Topics include the social roles of food: why we eat what we eat and with whom. Also discussed are food taboos and beliefs, food getting and preparation, changing food habits, contemporary problems of food production and malnutrition, and the effect of cultural and environmental influences on nutrient intake.
This course will try to answer such basic questions as: who eats what, why, when, how and with whom? Since Europe is a vast region of fascinating contrasts in terms of dietary and culinary customs, we shall explore the ways in which food reflects and is integrated in the everyday lives of the people. Austria and the neighboring countries along the Danube River (Germany, Hungary, Croatia, Serbia, Romania and Bulgaria) will be our laboratory in terms of exploring food consumption patterns. We will take advantage of our being (and eating) in a foreign culture by getting students out of the classroom and into the field to explore food and culture. The class will visit places that are associated with growing, producing, preparing and consuming foods, including agricultural museums, food festivals, and restaurants. (Required afternoon field trip to Bolzano, Italy)
Class Rules & Attendance The University of New Orleans International Summer School program has a mandatory class attendance policy. All students are required to attend class for all classes and any required lectures and field trips. No unexcused absences are allowed. However, UIBK students who have to miss a UNO class due to UIBK examinations in the first two weeks of our program, can receive one excused absence for this. Any further unexcused class days will result in an academic penalty. Each faculty member determines the penalty for missed classes. Most professors deduct a letter grade for each additional missed class day. For details, please refer to your course syllabi, which will be distributed on the first day of class.
