Students have detailed knowledge of the biotechnological production of foodstuffs and established micro- and molecular biological methods for microbiological quality assurance.

On the basis of selected practical experiments the biotechnological production of food is discussed and practically carried out. A set of micro- and molecular-biological methods are used for of quality assurance and the reliable detection of spoilage of foodstuffs is trained on the basis of current laws.

Laboratory course: common methods for the cultivation of aerobic and anaerobic microorganisms, molecular methods (e.g. qPCR), fermentation for the production of yeasts and alcohol; methods for quality assurance.
